As stated, with flooded batteries your best to use a hydrometer and periodically check the SG of each battery's electrolyte to confirm that they are all getting a suitable charge (ie no poor connections etc.) Based on your summary of voltage readings you seem to only be using about 4-5% of the batte...

Personally, I would never leave batteries without a "trickle" charge, even if they are AGM. I would leave the solar hooked up to keep the batteries charged through the whole winter. Pity the Outback rep did not tell you that the only real way of telling the state of charge of a FLA battery is by its electrolyte SG - read some of the topics on this in the Outback forums.

So I've noticed that my system only charges the batteries to about 53-54 volts during the day, even when there's little draw. For example, the panels are pulling in between 2.5 and 3.0 KwH (nice sunshine), and I'm only drawing about 0.8 KwH, yet the batteries are only going up to about 53-54 volts ...

Given the little use and SoC at 100% then it looks reasonable.
You may have expected the battery voltage to go to 27.2V (battery spec Float voltage setting).
What Float voltage do you have set on your charge controller?

....The FM80 can handle the input if I pick panels correctly. The panels would certainly be of a different mfgr and pole mounted and different exposure. But I can't tie them together without screwing up the MPPT for the larger array, true? And the wire run.... A separated CC would be needed, yes?? ...

I have to ask, you have such large arrays why are you using a 24v system? You may find that due to limited solar insolation some people find it necessary to overpanel their system in order to get their battery bank fully charged on a regular basis - especially during the short & often cloudy Winter...
